Making of home-brewed beer and home-brewed beerwort

Traditional way to make Punakallio's home-brewed beer is the surface yeast style bear made of barley and rye malts. From one kilo of malt you can get about 2 liters of home-brewed beerwort. This wort is transported to tanks and then gets yeasts. After this, wort is let to slowly ferment  about 15 - 18 degrees temperature about one week. After main fermentation, the temperature is lowered and the wort shall mature 2 -3 weeks in peace. After that, home-brewed beer is ready for drinking and tasting. Home-brewed beer is not filtered and it is a bit thick. Preservation temperature is about 1 - 5 degrees and the servicing temperature is the same.

The home-brewed beer is preserved in pressure tanks, where carbonic acid compensate the air and the taste of home brewed beer contains fresh and recent In the taste of home-brewed beer, there are many aromatic ingredients and it taste a little bit caramel. The color is red brown and the brightness is thick. For the preservation, a home-brewed beer preserves many months.

Content of the basewort is 23,5. The home-brewed beer is made of this wort containing alcohol about 8 - 10 t-%, depending the fermentation degree.
